Brookie Cookies Recipe



Brookie Cookies combine the best of both worlds: brownies and cookies. These treats have a fudgy brownie-like center and a chewy cookie edge, making them a delightful indulgence for any occasion.

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts or pecans

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

Mix the cocoa powder, baking soda, salt, and flour together in a bowl using a whisk

Melt the butter and mix it with the white sugar and brown sugar in a different large bowl until the mixture is light and fluffy

Add the egg and vanilla extract and mix them in well

Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined

Add the chocolate chips and chopped nuts and mix them in

Take tablespoon-sized chunks of dough and roll them into balls

Take them off the baking sheet and put them on it, leaving some space between each one

Use your fingers to gently flatten each ball of dough to make a cookie shape

Put it in an oven that has already been heated for 10 to 12 minutes, or until the edges are set but the middle is still a little soft

After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way

With milk or your favorite drink, these Brookie Cookies are a great treat

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions:

In a large bowl, combine almond flour, coconut flour, ground cinnamon, ground ginger, ground cardamom, ground nutmeg, ground cloves, and salt

In a separate bowl, whisk together melted coconut oil, maple syrup, egg, and vanilla extract

Pour the wet ingredients into the dry ingredients and mix until a dough forms

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

Roll out the chilled dough on a lightly floured surface to your desired thickness

Use cookie cutters to cut out shapes and place them on the prepared baking sheet

Gently reroll any scraps and continue cutting out cookies

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

Once cooled, you can decorate the cookies with paleo-friendly icing or enjoy them as they are

Ingredients:

  • 2 cups sushi rice
  • 4 sheets nori seaweed
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 1/2 lb sushi-grade fish salmon, tuna, or your choice, thinly sliced
  • Soy sauce, for dipping
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions:

Follow the directions on the package to cook the sushi rice

Cover the sushi rice with nori sheets, leaving a little space around the edges

On top of the rice, put cuke, avocado, carrot, and fish slices

Make tight rolls with the nori sheets and then cut them into small pieces

Soy sauce, pickled ginger, and wasabi should be served with it

Ingredients:

  • For the tart crust:
  • - 1 1/4 cups all-purpose flour
  • - 1/4 cup unsweetened cocoa powder
  • - 1/2 cup unsalted butter, cold and cubed
  • - 1/4 cup granulated sugar
  • - 1/4 teaspoon salt
  • - 1 large egg
  • - 1 tablespoon cold water
  • - For the caramel filling:
  • - 1 cup granulated sugar
  • - 6 tablespoons unsalted butter
  • - 1/2 cup heavy cream
  • - 1 teaspoon sea salt flakes
  • - For the chocolate ganache:
  • - 1/2 cup heavy cream
  • - 1 cup semi-sweet chocolate chips
  • - 1/2 teaspoon vanilla extract
  • - Additional sea salt flakes for garnish

Instructions:

For the tart crust, pulse the flour, granulated sugar, cubed butter, cocoa powder, and salt in a food processor

Pulse until coarse crumbs form from the mixture

To the mixture, add the egg and the cold water

Once the dough comes together, pulse it

Refrigerate the dough for a minimum of half an hour after shaping it into a disc and covering it with plastic wrap

Set the oven temperature to 175C 350F

Using a floured surface, roll out the chilled tart dough and line your tart pans with it

Using a fork, prick the bottom of the crust

Bake the crust for 15 to 20 minutes, or until it sets

Give it time to cool

Melt the sugar in a saucepan over medium-high heat for the caramel filling, stirring constantly, until it turns a deep amber color

Incorporate the butter and mix until it melts and blends well

Stirring constantly, carefully pour in the heavy cream

Take off the heat and mix in the flakes of sea salt

Fill the chilled tart shells with the caramel filling

While you make the chocolate ganache, put the tarts in the fridge to set

In order to make the chocolate ganache, bring the heavy cream to a simmer over medium heat in a saucepan

Take off the heat and blend in the vanilla extract and chocolate chips until they become glossy and smooth

Cover the caramel filling in the tart crusts with the chocolate ganache

Let the tarts sit in the fridge for at least two hours to cool and set

For the ideal harmony of sweet and salty, top the tarts with extra sea salt flakes just before serving
