Ingredients:

- 5 lbs boneless, skinless chicken thighs
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons cream cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
Season chicken thighs with salt, pepper, and Italian seasoning
Set Instant Pot to 'Saute' mode and heat olive oil
Brown chicken thighs on both sides for 2-3 minutes each
Remove chicken and set aside
Deglaze pot with chicken broth, scraping up any browned bits
Add minced garlic and cook for 1 minute
Turn off 'Saute' mode and add chicken back to the pot
Pour in heavy cream and sprinkle Parmesan cheese over the chicken
Top with cream cheese
Close the lid and set the Instant Pot to 'Manual' mode for 8 minutes
Once done, perform a quick pressure release
Remove chicken and shred with two forks
Switch the Instant Pot back to 'Saute' mode and simmer the sauce until thickened
Stir in shredded chicken until coated with the sauce
Serve hot, garnished with additional Parmesan cheese if desired
